Ingredients
1 pound chicken breasts or thighs
1 package (16 oz) potato gnocchi
2 medium carrots, sliced
2 celery stalks, chopped
1 cup frozen peas
1 medium yellow onion, diced
3 cloves garlic, minced
6 cups chicken broth
1 cup heavy cream
1 tablespoon olive oil
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 teaspoon fresh thyme
1 bay leaf
Salt and pepper to taste
Instructions
1. Heat olive oil and butter in a Dutch oven over medium heat. Sauté onion, garlic, carrots, and celery for about 5-6 minutes until softened.
2. Add the chicken, broth, thyme, and bay leaf. Bring to a boil, then reduce heat and simmer for 20-25 minutes until chicken is cooked through.
3. Remove chicken from the pot. Shred it using forks, then return it to the pot. Discard bay leaf.
4. Sprinkle in flour and stir well to combine. Slowly pour in the heavy cream, stirring until the soup begins to thicken.
5. Add gnocchi and cook for 3-4 minutes or until they float and are tender. Stir in frozen peas and heat through.
6. Season with salt and pepper to taste. Serve hot and garnish with fresh herbs if desired.
Notes
For a lighter version, substitute heavy cream with whole milk, but expect a thinner texture.
If freezing, leave out the gnocchi until reheating to prevent mushiness.
Fresh thyme can be replaced with ½ teaspoon dried thyme if needed.
