Description

This Cinnamon Swirl Cake is the perfect cross between a gooey cinnamon roll and a buttery vanilla cake. Packed with layers of cinnamon sugar and topped with a sweet glaze, it’s soft, fluffy, and incredibly easy to make. A crowd-pleaser for brunch, dessert, or cozy mornings.


Ingredients

2 cups all-purpose flour

1 cup granulated sugar

1 cup brown sugar

1 cup unsalted butter, softened

3 large eggs

1 cup whole milk

2 teaspoons vanilla extract

1 tablespoon ground cinnamon

1 cup powdered sugar (for glaze)

2 tablespoons milk (for glaze)

2 teaspoons baking powder

1/2 teaspoon salt


Instructions

1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper.

2. In a large bowl, cream the softened butter and granulated sugar until light and fluffy.

3. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

4. In a separate bowl, whisk together the flour, baking powder, and salt.

5. Add the dry mixture to the wet mixture alternately with the milk, beginning and ending with the flour. Mix just until combined.

6. In a small bowl, mix the brown sugar and cinnamon together.

7. Pour half of the batter into the prepared pan. Sprinkle with half of the cinnamon sugar. Swirl gently using a knife.

8. Repeat with the remaining batter and cinnamon sugar, swirling again gently.

9. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.

10. Let cool for 10–15 minutes. Meanwhile, whisk together the powdered sugar and milk to make a glaze.

11. Drizzle the glaze over the warm (not hot) cake. Slice and serve!

Notes

Don’t over-swirl the cinnamon mixture – aim for visible ribbons, not a blended batter.

Let the cake cool just enough before glazing so it doesn’t melt off completely.

For added crunch, top the batter with chopped pecans before baking.
