Ingredients

1 ¾ cups all-purpose flour

½ cup granulated sugar

½ cup brown sugar

½ cup unsalted butter, softened

2 large eggs

1 ½ teaspoons vanilla extract

1 ½ cups apples, peeled and diced

1 teaspoon baking soda

1 ½ teaspoons ground cinnamon

½ teaspoon salt

½ cup buttermilk

½ cup powdered sugar

12 tablespoons milk (for glaze)


Instructions

1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line it with parchment paper.

2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.

3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

4. In a separate bowl, whisk together flour, baking soda, cinnamon, and salt.

5. Alternate adding the dry ingredients and buttermilk to the creamed mixture, mixing just until combined.

6. Fold in the diced apples gently using a spatula.

7. Pour the batter into the prepared loaf pan and smooth the top.

8. Bake for 55–65 minutes or until a toothpick inserted in the center comes out clean.

9. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

10. Drizzle glaze over cooled bread, if desired.

Notes

For more apple flavor, mix diced apples with a pinch of cinnamon and sugar before folding into batter.

Don’t overmix the batter once the flour is added to keep the bread tender.

Store tightly wrapped to maintain moisture, or freeze individual slices for quick reheats.
