Christmas Gooey Butter Cookies are soft, chewy, and filled with holiday cheer. Ingredients
1 box yellow cake mix
8 oz cream cheese, softened
1/2 cup unsalted butter, softened
1 large egg
1 teaspoon vanilla extract
1/2 cup powdered sugar (for rolling)
Optional: red and green holiday sprinkles
Instructions
1. In a large bowl, beat the cream cheese and butter together until light and fluffy.
2. Add the egg and vanilla extract, and continue mixing until well combined.
3. Gradually mix in the yellow cake mix on low speed until just incorporated.
4. Cover the dough and chill in the refrigerator for at least 30 minutes.
5. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
6. Use a cookie scoop to portion out the dough, roll into balls, and coat each ball generously in powdered sugar.
7. Add holiday sprinkles on top if using.
8. Place the cookies on the baking sheet, 2 inches apart.
9. Bake for 10–12 minutes, until edges are set but centers are soft.
10. Cool on the baking sheet for 2–3 minutes before transferring to a wire rack to cool completely.
Notes
Chill the dough long enough—cold dough prevents spreading and gives a thick, chewy texture.
Don’t overbake—the cookies should be soft in the center when pulled from the oven.
For extra flair, sandwich two cookies with marshmallow fluff or frosting.
