These rich and fudgy Chocolate Thumbprint Cookies are filled with a luscious ganache center and make the perfect indulgent treat for chocolate lovers. Soft, elegant, and irresistibly delicious—ideal for gifting, holidays, or satisfying a sweet craving.
Ingredients
1 cup unsalted butter
1/2 cup granulated sugar (plus extra for rolling)
1/4 cup brown sugar
1 large egg yolk
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1/3 cup unsweetened cocoa powder
1/4 teaspoon salt
1/2 cup heavy cream
6 ounces semi-sweet chocolate chips or chopped chocolate
Instructions
1. In a large mixing bowl, beat butter, granulated sugar, and brown sugar until light and fluffy.
2. Add in egg yolk and vanilla extract; mix until smooth.
3. In a separate bowl, whisk together flour, cocoa powder, and salt. Gradually add dry ingredients to the butter mixture and mix just until combined.
4. Wrap the dough in plastic and chill for 30 minutes to firm up.
5. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
6. Roll dough into 1-inch balls. Roll each ball in granulated sugar and place on baking sheet.
7. Use your thumb or the back of a spoon to gently press an indentation into the center of each cookie.
8. Bake for 10–12 minutes. If needed, press centers again after baking.
9. While cookies bake, heat cream until just simmering and pour over chocolate in a bowl. Let sit for 2 minutes, then stir until smooth ganache forms.
10. Spoon or pipe ganache into the center of each slightly cooled cookie. Let set before serving.
Notes
Don’t skip chilling the dough—this step keeps the cookies from spreading too much in the oven.
Re-press the center of the cookies right after baking if they puff up.
Use high-quality chocolate for a richer, smoother ganache.
