Description
These Chocolate Peppermint Sandwich Cookies combine rich, fudgy chocolate cookies with a cool cream cheese peppermint filling, rolled in crushed candy canes and optionally drizzled with melted chocolate. Perfect for the holidays or any time you’re craving a festive, decadent treat.
Ingredients
1 cup unsalted butter, softened
3/4 cup granulated sugar
3/4 cup brown sugar
1 large egg
1 teaspoon vanilla extract
1/2 teaspoon peppermint extract
1 1/2 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
8 ounces cream cheese, softened
1 1/4 cups powdered sugar
1/4 teaspoon peppermint extract (for filling)
1/2 cup crushed candy canes
1/2 cup dark chocolate chips (optional, for drizzle)
Instructions
1. Beat together the butter, granulated sugar, and brown sugar until light and fluffy.
2. Add in the egg, vanilla extract, and peppermint extract. Mix until well combined.
3. In another bowl, whisk together flour, cocoa powder, baking soda, and salt.
4. Gradually mix the dry ingredients into the wet ingredients until a dough forms.
5. Chill the dough in the refrigerator for 30 minutes.
6. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
7. Scoop dough into uniform balls and place on the sheet. Bake for 8–10 minutes.
8. Let cookies cool completely on a wire rack.
9. Meanwhile, beat the cream cheese with powdered sugar and peppermint extract until smooth.
10. Spread filling onto the flat side of half the cookies, top with another cookie.
11. Roll the edges in crushed candy canes.
12. If desired, melt chocolate chips and drizzle over the tops. Let set before serving.
Notes
For cleaner edges, use a piping bag to apply the filling evenly.
To prevent spreading, always chill the dough before baking.
Store in the fridge for a firmer texture or at room temp for a softer bite.
