Ingredients

1 ½ cups cornflakes

½ cup creamy peanut butter

⅓ cup honey or light corn syrup

1 teaspoon vanilla extract

½ cup semi-sweet chocolate chips

2 tablespoons chocolate sprinkles (optional)


Instructions

1. Line a baking sheet with parchment paper and set aside.

2. In a small saucepan over low heat (or a microwave-safe bowl), combine the peanut butter, honey, and vanilla. Stir until smooth and melted.

3. Pour cornflakes into a large mixing bowl. Add the warm peanut butter mixture and stir until the flakes are fully coated.

4. Drop spoonfuls of the mixture onto the parchment-lined baking sheet. Gently shape into mounds.

5. Melt the chocolate chips in 30-second bursts in the microwave or over a double boiler until smooth.

6. Spoon melted chocolate over each haystack and top with sprinkles if using.

7. Refrigerate for 20–30 minutes until the chocolate sets.
