Description

These Chocolate Chip Pancakes are soft, fluffy, and studded with gooey mini chocolate chips. Ingredients

1 ½ cups all-purpose flour

2 teaspoons baking powder

2 tablespoons granulated sugar

¼ teaspoon salt

1 ¼ cups whole milk

1 large egg

1 teaspoon vanilla extract

2 tablespoons unsalted butter, melted

½ cup mini semi-sweet chocolate chips


Instructions

1. In a medium bowl, whisk together flour, baking powder, sugar, and salt.

2. In a separate large bowl, whisk together milk, egg, vanilla extract, and melted butter.

3. Pour dry ingredients into wet and stir until just combined. Do not overmix. Fold in chocolate chips.

4. Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or spray.

5. Pour ¼ cup batter for each pancake. Cook until bubbles form and edges look set, about 2–3 minutes.

6. Flip and cook the other side for 1–2 minutes or until golden brown.

7. Serve warm with extra chocolate chips and maple syrup.

Notes

Don’t overmix the batter—lumps are okay and make fluffier pancakes.

Let the batter rest for 5 minutes before cooking for best texture.

For extra chocolate flavor, sprinkle chips on top after pouring batter on the skillet.
