Description

A vibrant and satisfying one-bowl meal featuring smoky chipotle-marinated chicken paired with fluffy rice, creamy guacamole, sweet corn, black beans, shredded cheese, and fresh toppings. Great for a flavorful dinner or easy meal prep.


Ingredients

2 boneless, skinless chicken breasts (or thighs)

1 tsp chipotle chili powder

1/2 tsp garlic powder

1/2 tsp cumin

1/2 tsp smoked paprika

1/2 tsp salt

Juice of 1 lime

2 cups cooked white or brown rice

1 cup black beans (drained and rinsed)

1 cup corn (fresh, canned, or roasted)

1 cup guacamole

1 cup shredded Monterey Jack or Mexican blend cheese

1 cup shredded lettuce

1/2 cup pico de gallo (tomatoes, onion, jalapeño)

1/4 cup sour cream (optional)


Instructions

  1. Marinate Chicken: Mix chipotle chili, garlic powder, cumin, paprika, salt, and lime juice in a bowl. Coat the chicken thoroughly and marinate for at least 30 minutes.
  2. Cook Chicken: Grill or sear the chicken on medium-high heat until fully cooked. Let rest and slice into strips.
  3. Prepare Base: Cook rice as directed. Warm black beans and corn separately.
  4. Chop Fresh Ingredients: Dice tomatoes, onions, jalapeños, and shred the lettuce.
  5. Assemble Bowl: Start with rice, then top with chicken, beans, corn, guacamole, pico de gallo, lettuce, and cheese. Add sour cream if using.
