Description

Smoky, spicy, and irresistibly creamy, these Chipotle Bang Bang Chicken Skewers are perfect for grilling season or weeknight dinners. The chicken is marinated in chipotle-lime goodness and topped with a signature bang bang sauce that’s sweet, tangy, and spicy.


Ingredients

1.5 lbs chicken breasts or thighs, cut into chunks

2 chipotle peppers in adobo sauce, chopped

1/3 cup Greek yogurt or mayo (for marinade)

1 tbsp honey

1 tsp garlic powder

1 tsp onion powder

1 tbsp lime juice

Salt & pepper, to taste

Fresh cilantro, chopped (for garnish)

Skewers (wooden or metal)

Bang Bang Sauce (for topping):

1/3 cup Greek yogurt or mayo

1 tbsp honey

1 chipotle pepper in adobo, minced

1 tsp lime juice


Instructions

  1. Make the Marinade: In a bowl, mix chipotle peppers, yogurt or mayo, honey, garlic powder, onion powder, lime juice, salt, and pepper.
  2. Marinate Chicken: Add chicken pieces to the marinade and coat well. Cover and refrigerate for 30 minutes or up to 24 hours.
  3. Prepare Skewers: Soak wooden skewers if using. Thread marinated chicken onto skewers.
  4. Grill: Preheat grill to medium-high. Oil grates and grill skewers for 10-12 minutes, turning occasionally, until chicken is cooked through and charred.
  5. Make Sauce: In a separate bowl, whisk together all bang bang sauce ingredients.
  6. Serve: Drizzle grilled chicken with sauce and sprinkle with fresh cilantro.
