This Chicken Scampi with Creamy Garlic Parmesan Rice is a rich and flavorful dish made with golden-seared chicken tossed in a buttery garlic sauce, served over a bed of creamy parmesan rice. Perfect for a cozy dinner or impressive weeknight meal.
Ingredients
1.5 lbs chicken breast or thighs, boneless and skinless, cut into chunks
4 cloves garlic, freshly minced
3 tablespoons unsalted butter
2 tablespoons olive oil
1 teaspoon Italian seasoning
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon red pepper flakes (optional)
2 tablespoons fresh parsley, chopped
3 cups cooked white rice (long-grain or jasmine)
1 cup chicken broth
¾ cup heavy cream
¾ cup freshly grated parmesan cheese
1 tablespoon unsalted butter
Salt and black pepper to taste
Instructions
1. Heat olive oil and 1 tablespoon of butter in a skillet over medium-high heat. Add chicken, season with salt, pepper, and Italian seasoning. Cook until golden and fully cooked. Remove and set aside.
2. In the same skillet, reduce heat to medium. Melt 2 tablespoons of butter, add minced garlic, and sauté until fragrant (about 1 minute). Stir in red pepper flakes if using. Let it simmer for 1–2 minutes.
3. In a medium saucepan, bring chicken broth to a gentle boil. Add cooked rice, heavy cream, and butter. Stir in parmesan cheese and mix continuously on low heat until creamy. Season with salt and pepper.
4. Return the chicken to the skillet and toss to coat in the garlic butter sauce. Cook together for 2 more minutes.
5. Spoon rice onto plates, top with chicken and sauce, and finish with a sprinkle of fresh parsley. Serve hot.
Notes
For extra creamy rice, use warm broth and add cheese slowly while stirring.
Chicken thighs offer more flavor and stay juicier than breasts.
Don’t overcook the garlic—sauté just until fragrant to avoid bitterness.
