Description
Chicken Rogan Josh is a rich, aromatic Indian curry made with juicy marinated chicken simmered in a spiced tomato-yogurt gravy. It’s perfect for weeknight comfort or a weekend dinner party, packed with warming spices and bold flavor. Serve it over basmati rice or with naan for a cozy meal that satisfies every time.
Ingredients
1.5 lbs chicken (boneless or bone-in)
1 cup Greek yogurt
2 tablespoons tomato paste
2 medium onions, finely chopped
1 tablespoon garlic paste
1 tablespoon ginger paste
2 teaspoons Kashmiri red chili powder
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon ground turmeric
1 teaspoon garam masala
1 cinnamon stick
3 cloves
3 green cardamom pods
1 bay leaf
1 teaspoon salt (adjust to taste)
1/2 teaspoon black pepper
3 tablespoons vegetable oil or ghee
1/4 cup fresh cilantro (for garnish)
Instructions
1. In a large bowl, combine chicken with yogurt, turmeric, chili powder, and salt. Marinate for at least 30 minutes.
2. Heat oil or ghee in a heavy-bottomed pan. Add cinnamon stick, cardamom pods, cloves, and bay leaf. Sauté until fragrant (about 1 minute).
3. Add chopped onions and cook until golden brown. Stir in garlic and ginger paste, cooking until the raw aroma disappears.
4. Add tomato paste, Kashmiri chili, cumin, coriander, and any remaining turmeric. Cook until the oil begins to separate.
5. Add marinated chicken, stir to coat with the masala. Cook for 5–7 minutes. Add 1/2 cup water, cover, and simmer on low for 25–30 minutes.
6. Sprinkle in garam masala, stir, and simmer uncovered for 5 more minutes to thicken the gravy.
7. Garnish with chopped cilantro. Serve hot with rice or naan.
Notes
Use full-fat Greek yogurt for the richest marinade and a creamy sauce.
Toast your whole spices briefly to release their oils for maximum aroma.
