Description

Ingredients

2 chicken breasts, cut into chunks

1 tablespoon olive oil

1 teaspoon paprika

1/2 teaspoon cumin

1/2 teaspoon garlic powder

1/2 teaspoon salt

1 cup cooked white or brown rice

1/2 cup canned black beans, rinsed and drained

1/2 cup corn kernels (fresh, frozen, or canned)

1/2 cup diced fresh tomatoes

1/2 cup guacamole

1 lime, cut into wedges

Optional: chopped cilantro for garnish


Instructions

  1. In a bowl, toss chicken chunks with olive oil, paprika, cumin, garlic powder, and salt.
  2. Heat a skillet over medium-high heat. Sear the chicken for 6–8 minutes until fully cooked and golden.
  3. While chicken cooks, prepare your rice and warm the beans and corn.
  4. Dice tomatoes, prepare guacamole, and slice the lime.
  5. To assemble, start with rice in a bowl, then add beans, corn, and chicken.
  6. Top with diced tomatoes, a scoop of guacamole, cilantro (optional), and a lime wedge.
