Ingredients
2 chicken breasts, cut into chunks
1 tablespoon olive oil
1 teaspoon paprika
1/2 teaspoon cumin
1/2 teaspoon garlic powder
1/2 teaspoon salt
1 cup cooked white or brown rice
1/2 cup canned black beans, rinsed and drained
1/2 cup corn kernels (fresh, frozen, or canned)
1/2 cup diced fresh tomatoes
1/2 cup guacamole
1 lime, cut into wedges
Optional: chopped cilantro for garnish
Instructions
- In a bowl, toss chicken chunks with olive oil, paprika, cumin, garlic powder, and salt.
- Heat a skillet over medium-high heat. Sear the chicken for 6–8 minutes until fully cooked and golden.
- While chicken cooks, prepare your rice and warm the beans and corn.
- Dice tomatoes, prepare guacamole, and slice the lime.
- To assemble, start with rice in a bowl, then add beans, corn, and chicken.
- Top with diced tomatoes, a scoop of guacamole, cilantro (optional), and a lime wedge.
