Ingredients
2 cups cooked chicken
2 cups broccoli florets
2 cups cooked white rice
1 can (10.5 oz) cream of chicken soup
1 cup sour cream or Greek yogurt
2 cups shredded cheddar cheese
1 teaspoon garlic powder
½ teaspoon salt
½ teaspoon black pepper
Instructions
1. Cook and shred the chicken if using fresh; steam broccoli until just tender; prepare rice if not using leftovers.
2. In a large mixing bowl, combine chicken, broccoli, rice, cream of chicken soup, sour cream, 1 cup of cheddar cheese, garlic powder, salt, and pepper. Mix until fully combined.
3. Spread the mixture evenly into a greased 9×13-inch baking dish.
4. Sprinkle remaining 1 cup of cheddar cheese on top. Add crushed crackers or breadcrumbs if desired.
5. Bake at 350°F (175°C) for 25–30 minutes until the top is golden and bubbly.
6. Let rest 5–10 minutes before serving.
Notes
You can use rotisserie chicken to cut down prep time.
Thawed frozen broccoli works just as well as fresh—just pat dry before using.
Add crushed Ritz crackers or panko breadcrumbs on top for extra crunch.
