Description

This Chicken and Sweet Potato Skillet is a wholesome one-pan dinner made with tender seared chicken, caramelized sweet potatoes, and aromatic herbs. Naturally gluten-free, hearty, and perfect for both weeknight meals or weekend prep.


Ingredients

1 lb chicken breast, cubed

2 medium sweet potatoes, peeled and diced

2 tbsp olive oil

2 cloves garlic, minced

1 tsp fresh thyme or rosemary

1 tsp salt

½ tsp black pepper

½ tsp paprika (optional)

1 tbsp chopped parsley (for garnish)


Instructions

1. Cut chicken breasts into evenly sized cubes. Season with salt, pepper, and optional paprika. Set aside.

2. Peel and cube sweet potatoes into ½-inch pieces for faster, even cooking.

3. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Sear chicken for 4–6 minutes until golden and cooked through. Remove and set aside.

4. Add remaining olive oil and sweet potatoes to the skillet. Cook for 10–12 minutes until tender and browned.

5. Stir in minced garlic and thyme during the last 2 minutes of cooking.

6. Return chicken to the skillet and toss everything together. Cook 2–3 more minutes.

7. Garnish with chopped parsley and serve hot.

Notes

Cut sweet potatoes into small cubes to reduce cooking time and increase caramelization.

Don’t overcrowd the skillet; it helps keep the chicken and potatoes crispy.

Use a lid to lightly steam the sweet potatoes if they’re browning too quickly but still hard inside.
