Ingredients
2 cups shredded chicken
1 cup pearl couscous
8 cups chicken broth
2 ribs celery, diced
1 small yellow onion, diced
3 cloves garlic, minced
1 tablespoon olive oil
2 tablespoons fresh dill, chopped
2 tablespoons fresh parsley, chopped
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
Instructions
1. In a large Dutch oven or soup pot, heat olive oil over medium heat.
2. Add diced onion and celery. Sauté until softened, about 5 minutes.
3. Stir in minced garlic and cook for another 1 minute.
4. Pour in the chicken broth and bring to a gentle boil.
5. Season with salt, black pepper, and red pepper flakes. Reduce heat and simmer for 10 minutes.
6. Stir in the pearl couscous and cook uncovered for 7–10 minutes, until tender.
7. Add shredded chicken and simmer for 5 minutes to warm through.
8. Turn off heat and stir in chopped dill and parsley. Let sit for 2–3 minutes.
9. Serve warm with optional garnish of fresh herbs.
Notes
Slightly undercook the couscous if you plan to freeze the soup to maintain texture.
Rotisserie chicken makes a great time-saving swap.
Add a splash of lemon juice before serving for an extra layer of brightness.
