Description

This creamy Chicken Alfredo Lasagna is a comforting twist on the classic Italian dish, packed with shredded chicken, spinach, a rich homemade Alfredo sauce, and gooey cheeses. It’s perfect for cozy dinners, meal prep, or impressing guests with minimal fuss.


Ingredients

12 lasagna noodles, cooked or oven-ready

3 cups cooked shredded chicken

3 cups fresh spinach, sautéed and drained

1 ½ cups ricotta cheese

3 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

4 tablespoons unsalted butter

3 cloves garlic, minced

2 cups heavy cream

1 cup whole milk

2 tablespoons all-purpose flour

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon Italian seasoning

Olive oil, for sautéing spinach

Chopped parsley, for garnish (optional)


Instructions

1. In a large saucepan over medium heat, melt butter. Add minced garlic and cook for 1–2 minutes until fragrant.

2. Stir in flour and cook for another minute, whisking constantly. Slowly pour in heavy cream and milk, whisking until smooth.

3. Once the sauce thickens, stir in Parmesan cheese, salt, pepper, and Italian seasoning. Remove from heat.

4. In a skillet, sauté spinach with a touch of olive oil until wilted. Let it cool, squeeze out excess moisture, and roughly chop.

5. In a medium bowl, combine ricotta, half the mozzarella, chopped spinach, ¼ cup Parmesan, salt, and pepper. Mix well.

6. Grease a 9×13 baking dish and spread a layer of Alfredo sauce on the bottom.

7. Add a layer of noodles, then spread the ricotta-spinach mixture, shredded chicken, a drizzle of Alfredo sauce, and mozzarella.

8. Repeat for three layers, finishing with noodles, remaining Alfredo sauce, and cheese on top.

9. Cover with foil and bake at 375°F (190°C) for 25 minutes. Remove foil and bake another 10–15 minutes until bubbly and golden.

10. Let the lasagna rest for 10 minutes before slicing and serving. Garnish with parsley if desired.

Notes

For maximum flavor, use freshly grated Parmesan rather than pre-shredded.

Letting the lasagna rest before slicing ensures clean layers and prevents a runny texture.

If using oven-ready noodles, make sure your sauce is slightly thinner to help cook the pasta fully.
