Ingredients

20 jumbo pasta shells

2 cups ricotta cheese

1 ½ cups shredded mozzarella cheese, divided

½ cup grated Parmesan cheese

1 large egg

2 cups fresh spinach, chopped

2 cups marinara sauce

2 cloves garlic, minced

½ teaspoon salt

½ teaspoon black pepper

½ teaspoon dried Italian seasoning

1 tablespoon fresh parsley, chopped (for garnish)


Instructions

  1. Cook the Pasta Shells – Bring a large pot of salted water to a boil and cook the jumbo pasta shells according to the package instructions until al dente. Drain and rinse under cold water.
  2. Prepare the Filling – In a large mixing bowl, combine ricotta cheese, 1 cup of shredded mozzarella, Parmesan cheese, chopped spinach, egg, minced garlic, salt, black pepper, and Italian seasoning. Stir until well combined.
  3. Stuff the Shells – Using a spoon or piping bag, carefully fill each cooked pasta shell with the spinach and ricotta mixture.
  4. Assemble the Dish – Preheat oven to 375°F (190°C). Spread 1 cup of marinara sauce evenly across the bottom of a baking dish. Arrange the stuffed shells in a single layer over the sauce. Spoon the remaining marinara sauce over the shells.
  5. Add Cheese and Bake – Sprinkle the remaining ½ cup of mozzarella cheese over the top. Cover with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, until the cheese is melted and bubbly.
  6. Garnish and Serve – Let rest for 5 minutes, garnish with fresh parsley, and serve warm.
