Ingredients
2 pounds baby potatoes, halved or quartered
2 tablespoons olive oil
1 packet ranch seasoning mix (about 1 ounce)
1 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
2 tablespoons chopped fresh parsley (optional)
Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Wash and cut potatoes into halves or quarters.
- Toss potatoes with olive oil, ranch seasoning, salt, and pepper.
- Spread on a lined or greased baking sheet in a single layer.
- Roast for 25-30 minutes until golden and fork-tender.
- Sprinkle cheddar and mozzarella cheeses on top.
- Return to oven and bake for 5-7 more minutes until cheese is melted.
