Description

Cheesy Ranch Potatoes are a comforting, cheesy, and flavorful side dish that pairs perfectly with grilled meats or stands alone as a satisfying snack. Roasted baby potatoes are seasoned with zesty ranch and topped with melted cheddar and mozzarella, then finished with a sprinkle of fresh parsley


Ingredients

2 pounds baby potatoes, halved or quartered

2 tablespoons olive oil

1 packet ranch seasoning mix (about 1 ounce)

1 cup shredded cheddar cheese

1/2 cup shredded mozzarella cheese

2 tablespoons chopped fresh parsley (optional)

Salt and pepper to taste


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash and cut potatoes into halves or quarters.
  3. Toss potatoes with olive oil, ranch seasoning, salt, and pepper.
  4. Spread on a lined or greased baking sheet in a single layer.
  5. Roast for 25-30 minutes until golden and fork-tender.
  6. Sprinkle cheddar and mozzarella cheeses on top.
  7. Return to oven and bake for 5-7 more minutes until cheese is melted.
  8. Garnish with parsley and serve hot.
