Ingredients

2 boneless skinless chicken breasts

8 oz fettuccine pasta

1 tablespoon olive oil

2 tablespoons butter

3 cloves garlic minced

2 cups heavy cream

2 cups chicken broth

1 cup freshly grated Parmesan cheese

1 teaspoon salt

½ teaspoon black pepper

1 tablespoon chopped parsley (optional)


Instructions

1. Season the chicken with salt and pepper on both sides.

2. In a large skillet or Dutch oven, heat olive oil and 1 tablespoon of butter over medium heat. Sear chicken for 5–6 minutes per side or until golden and cooked through. Remove and set aside.

3. In the same pan, add the remaining butter and garlic. Sauté for 30 seconds until fragrant.

4. Pour in the heavy cream and chicken broth. Stir to combine and bring to a simmer.

5. Add fettuccine noodles directly into the pot. Cook uncovered, stirring occasionally, until pasta is al dente and liquid is mostly absorbed, about 10–12 minutes.

6. Reduce heat and stir in Parmesan cheese. Mix until sauce is thick and creamy.

7. Slice the chicken and return to the pot. Heat for 2–3 minutes until warmed through.

8. Garnish with parsley if using and serve hot.
