Ingredients

2 pounds baby red potatoes

2 cups shredded sharp cheddar cheese

1 pound bacon, cooked and crumbled

1 cup sour cream

½ teaspoon salt

½ teaspoon black pepper

2 tablespoons butter (optional)

¼ cup chopped green onions (for garnish)


Instructions

1. Preheat oven to 375°F and grease a 9×13-inch baking dish.

2. In a skillet, cook bacon until crispy. Drain on paper towels and set aside.

3. Boil baby red potatoes in salted water until just fork-tender. Drain and let cool slightly. Cut into chunks.

4. In a large mixing bowl, combine potato chunks, 1½ cups cheddar cheese, ¾ of the crumbled bacon, sour cream, salt, and pepper. Stir gently to coat.

5. Transfer mixture to prepared baking dish. Top with remaining cheddar cheese and bacon. Dot with butter if using.

6. Cover dish with foil and bake for 20 minutes. Remove foil and bake another 10 minutes until golden and bubbly.

7. Garnish with chopped green onions before serving.

Notes
