Description

Cheesy Meatloaf Casserole takes your favorite comfort food and transforms it into a layered, cheesy, bacon-topped bake. This hearty dinner is perfect for family meals, leftovers, or make-ahead nights.


Ingredients

2 pounds ground beef

1 small onion, diced

2 cloves garlic, minced

1 cup breadcrumbs

2 large eggs

1/3 cup milk

3 cups mashed potatoes (prepared)

2 cups shredded cheddar cheese

1/2 cup cooked bacon crumbles

1 tablespoon chopped parsley (optional)


Instructions

1. Preheat oven to 375°F (190°C) and grease a 9×13 baking dish.

2. In a large bowl, combine ground beef, onion, garlic, breadcrumbs, eggs, milk, salt, and pepper. Mix until just combined.

3. Press the meat mixture into the prepared baking dish, forming an even layer. Bake for 20–25 minutes until mostly cooked through.

4. While the meat is baking, prepare mashed potatoes if not already done.

5. Remove the dish from the oven and spread mashed potatoes evenly over the meat layer.

6. Top with shredded cheddar cheese and bacon crumbles.

7. Return to oven and bake for another 10–15 minutes, until the cheese is melted and bubbly.

8. Let rest for 5 minutes. Garnish with parsley and serve warm.

Notes

Don’t overmix the meat or it may become dense—just until combined.

Let the casserole rest after baking to make clean slices.

For smoother mashed potatoes, use a hand mixer for fluffier texture.
