Ingredients
1 ½ cups mashed potatoes
2 large eggs, beaten
¾ cup shredded cheddar cheese
¼ cup grated Parmesan cheese
2 tablespoons chopped chives
½ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon garlic powder (optional)
Butter or nonstick spray for greasing muffin tin
Instructions
1. Preheat oven to 400°F (200°C). Grease a 12-cup muffin tin generously with butter or nonstick spray.
2. In a large bowl, combine mashed potatoes, beaten eggs, cheddar, Parmesan, chives, salt, pepper, and garlic powder if using. Stir until well mixed.
3. Spoon the mixture into the muffin cups, filling each about ¾ full. Smooth the tops lightly with a spoon.
4. Bake for 25–30 minutes until golden brown and edges are crisp.
5. Let rest for 5 minutes in the pan. Carefully lift out each puff with a spoon or offset spatula.
