Cheesy Butternut Squash Casserole

Description

This Cheesy Butternut Squash Casserole is a cozy, comforting bake filled with roasted butternut squash, savory sausage, and sharp cheddar cheese. It’s bound together with a creamy egg and milk mixture, then baked until bubbling and golden. Perfect as a holiday side or a weeknight main, this dish balances sweetness and richness in every bite.

Ingredients

3 cups cubed butternut squash

1 tablespoon olive oil

1 pound ground sausage

1 small onion, chopped

1 teaspoon chopped fresh sage or ½ teaspoon dried sage

1 cup sharp cheddar cheese, shredded (divided)

2 large eggs

¾ cup milk or half-and-half

½ teaspoon salt

¼ teaspoon black pepper

Instructions

1. Preheat oven to 400°F. Toss cubed butternut squash with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25 minutes, or until tender and lightly browned.

2. In a large skillet, brown the sausage over medium heat, breaking it apart until fully cooked. Drain excess fat.

3. In the same skillet, sauté the onion until soft and translucent. Stir in chopped sage and cook for another minute.

4. In a large bowl, mix together roasted squash, sausage, sautéed onion, and half the cheddar cheese.

5. In a separate bowl, whisk eggs and milk together. Pour over the squash mixture and stir to combine.

6. Grease a 9×13-inch baking dish and pour the mixture into it. Top with remaining cheese.

7. Cover with foil and bake at 375°F for 20 minutes. Remove foil and bake for another 10–15 minutes until bubbly and golden.

8. Let the casserole rest for 10 minutes before serving.

Notes

Cut your squash into uniform pieces for even roasting and better texture.

Let the casserole sit before cutting—it helps the layers set and flavors meld.

For added crunch, sprinkle breadcrumbs or crushed crackers before the final bake.
