Ingredients
12 oz bowtie pasta (farfalle)
1.5 lbs boneless, skinless chicken thighs
4 cloves garlic, minced
1 cup freshly grated parmesan cheese
1 cup heavy cream
3 tablespoons butter
2 tablespoons olive oil
1 teaspoon Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons chopped parsley (optional)
Instructions
1. Season the chicken with salt, pepper, and Italian seasoning.
2. In a large skillet, heat olive oil and 1 tablespoon of butter over medium-high heat.
3. Sear chicken thighs for 4–5 minutes per side until golden brown and fully cooked (165°F internal temp). Set aside.
4. In a large pot, boil salted water and cook bowtie pasta until al dente. Drain and set aside.
5. In the same skillet used for chicken, reduce heat to medium and melt remaining butter.
6. Add minced garlic and sauté for 1 minute until fragrant.
7. Pour in heavy cream, bring to a light simmer, then gradually stir in parmesan cheese until smooth.
8. Add cooked pasta to the sauce, tossing to coat evenly.
9. Serve pasta with seared chicken on the side. Garnish with parsley and extra parmesan if desired.
Notes
Let the chicken rest for 5 minutes before slicing to keep juices locked in.
Freshly grated parmesan melts better and gives a smoother sauce than pre-shredded.
To reheat, add a splash of milk or cream to keep the pasta creamy.
