Ingredients
1 tablespoon olive oil
1 pound ground beef
1 teaspoon garlic powder
1 teaspoon onion powder
2 cups red enchilada sauce
10 ounces cheese tortellini (cooked or refrigerated)
1/2 cup sour cream
1 cup shredded Mexican cheese blend
Fresh cilantro, chopped (optional garnish)
Instructions
1. Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks.
2. Drain excess grease if necessary, then sprinkle in garlic powder and onion powder. Stir to combine and cook for 1 more minute.
3. Pour in the enchilada sauce. Stir and simmer over low heat for 3–4 minutes.
4. Add the cooked tortellini and fold it gently into the sauce to coat evenly.
5. Remove from heat and stir in sour cream until the sauce is smooth and creamy.
6. Sprinkle shredded cheese over the top. Cover with a lid and let it sit until cheese melts.
7. Garnish with chopped cilantro and serve hot.
Notes
For an extra creamy result, mix in 2 ounces of cream cheese before adding sour cream.
You can swap beef with ground turkey or plant-based crumbles for variation.
To add veggies, stir in bell peppers or corn during the sauce stage.
