Description
Golden, crispy cauliflower fritters packed with herbs and Parmesan, perfect as a snack, appetizer, or light meal. Enjoy them with your favorite dip or on their own!
Ingredients
1 medium cauliflower head (or 4 cups riced cauliflower)
2 large eggs
1/3 cup all-purpose flour (or gluten-free alternative)
1/2 cup grated Parmesan cheese
2 cloves garlic, minced
2 tablespoons fresh parsley or dill, chopped
1/2 teaspoon salt
1/4 teaspoon black pepper
Oil for frying
Instructions
- Cut cauliflower into florets; steam or boil until tender. Cool, then finely chop or pulse in a food processor.
- In a large bowl, mix cauliflower, eggs, flour, Parmesan, garlic, herbs, salt, and pepper until combined.
- Scoop mixture and shape into small patties.
- Heat oil in skillet over medium heat. Fry patties 3-4 minutes per side until golden and crisp.
- Transfer to paper towel-lined plate. Serve warm with your favorite dip.
