Description

Golden, crispy cauliflower fritters packed with herbs and Parmesan, perfect as a snack, appetizer, or light meal. Enjoy them with your favorite dip or on their own!


Ingredients

1 medium cauliflower head (or 4 cups riced cauliflower)

2 large eggs

1/3 cup all-purpose flour (or gluten-free alternative)

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

2 tablespoons fresh parsley or dill, chopped

1/2 teaspoon salt

1/4 teaspoon black pepper

Oil for frying


Instructions

  1. Cut cauliflower into florets; steam or boil until tender. Cool, then finely chop or pulse in a food processor.
  2. In a large bowl, mix cauliflower, eggs, flour, Parmesan, garlic, herbs, salt, and pepper until combined.
  3. Scoop mixture and shape into small patties.
  4. Heat oil in skillet over medium heat. Fry patties 3-4 minutes per side until golden and crisp.
  5. Transfer to paper towel-lined plate. Serve warm with your favorite dip.
