Ingredients
4 eggs
1 can (14 oz) sweetened condensed milk
1 can (13.5 oz) coconut milk
1 cup milk
1 cup sugar
1 cup all-purpose flour
½ cup unsalted butter, melted
1 tablespoon baking powder
½ cup grated coconut (plus extra for garnish)
Instructions
1. Place eggs, sweetened condensed milk, coconut milk, milk, sugar, flour, melted butter, and baking powder into a blender. Blend until smooth.
2. Grease a bundt or tube pan thoroughly. Pour in the blended batter.
3. Bake in a preheated oven at 350°F (175°C) for 50–60 minutes, or until a toothpick inserted comes out clean.
4. Let the cake cool slightly. Pour a few tablespoons of sweetened condensed milk or coconut milk over the top for extra moistness.
5. Garnish with grated coconut. Chill in the fridge for at least 2 hours before serving.
Notes
Let the cake cool slightly before pouring extra milk; too hot and it’ll become soggy.
Use finely grated coconut for garnish to keep the texture delicate.
