Ingredients
1 cup unsalted butter, softened
0.5 cup granulated sugar
0.5 cup brown sugar, packed
1 large egg
1 teaspoon vanilla extract
2 cups all-purpose flour
0.5 teaspoon baking soda
0.25 teaspoon salt
1.5 teaspoons ground cardamom
0.5 cup white chocolate, optional (for topping or drizzle)
Instructions
1. In a large bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.
2. Beat in the egg and vanilla extract until well combined.
3. In a separate bowl, whisk together flour, baking soda, salt, and cardamom.
4. Gradually add the dry mixture to the wet ingredients, mixing just until combined.
5. Cover and refrigerate the dough for 30 minutes to chill.
6. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
7. Scoop dough onto baking sheets, spacing cookies 2 inches apart.
8. Bake for 9 to 11 minutes or until edges are lightly golden.
9. Let cool on baking sheet for 5 minutes, then transfer to a wire rack.
10. If using white chocolate, drizzle or spoon onto warm cookies and allow to set.
Notes
For maximum flavor, use freshly ground cardamom pods.
Chilling the dough is essential for thick, chewy cookies.
White chocolate drizzle is optional but adds creamy contrast to the spice.
