Ingredients
4 large sweet potatoes, peeled and sliced into 1/2-inch rounds
1 cup brown sugar
1/2 cup unsalted butter, melted
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 cup water or orange juice
Instructions
1. Preheat oven to 375°F (190°C).
2. Peel and slice sweet potatoes into 1/2-inch thick rounds.
3. Parboil the sweet potato slices in boiling water for 5–7 minutes until just tender. Drain and set aside.
4. In a mixing bowl, whisk together brown sugar, melted butter, cinnamon, vanilla, salt, and water (or orange juice) until smooth.
5. Grease a baking dish and layer in the sweet potatoes.
6. Pour the syrup mixture over the slices, ensuring each one is coated.
7. Cover the dish with foil and bake for 25 minutes.
8. Uncover and continue baking for 20 more minutes until syrup thickens and potatoes caramelize.
9. Let sit 5–10 minutes before serving. Enjoy warm.
Notes
For the richest flavor, opt for orange juice over water in the syrup.
