Ingredients
2 large chicken breasts, diced
2 tablespoons Cajun seasoning (adjust to taste)
1 tablespoon olive oil or butter
1 teaspoon garlic powder
1 teaspoon onion powder
1 packet ranch seasoning mix (about 1 oz)
1 cup heavy cream
1/2 cup grated Parmesan cheese
12 oz rotini or penne pasta, cooked al dente
Optional: 1 cup peas, 1 cup diced tomatoes, or 1 cup fresh spinach
Instructions
- Season diced chicken with Cajun seasoning and a pinch of salt.
- Heat oil or butter in a large skillet over medium-high heat. Sear chicken until golden and cooked through. Remove and set aside.
- In the same skillet, reduce heat. Add garlic powder, onion powder, and ranch seasoning. Stir in heavy cream.
- Simmer sauce for 2-3 minutes, then add Parmesan cheese. Stir until sauce thickens.
- Return chicken to skillet. Add cooked pasta and mix well. Simmer 2-3 more minutes.
- Stir in optional add-ins like peas, tomatoes, or spinach if desired.
- Serve hot with extra Parmesan or fresh parsley on top.
