Description

A hearty, flavorful bowl of Cajun Potato Soup is everything you want in a comforting dish—rich, creamy, slightly spicy, and loaded with tender potatoes and smoky bacon. Perfect for cozy nights or a casual family dinner.


Ingredients

6 slices bacon, chopped

1 medium yellow onion, diced

3 cloves garlic, minced

1 tablespoon Cajun seasoning

4 cups diced Yukon Gold or Russet potatoes (about 4 medium potatoes)

4 cups chicken broth

1 cup heavy cream

Salt and black pepper to taste

2 green onions, chopped (for garnish)


Instructions

  1. In a large pot, cook the bacon over medium heat until crispy. Remove and set aside, keeping 2 tablespoons of the bacon fat in the pot.
  2. Add diced onion and cook until translucent, about 5 minutes. Stir in garlic and cook for 1 more minute.
  3. Stir in Cajun seasoning, then add diced potatoes and toss to coat.
  4. Pour in chicken broth and bring to a boil. Reduce heat, cover, and simmer for 15–20 minutes until potatoes are tender.
  5. Stir in heavy cream and let simmer uncovered for another 5 minutes.
  6. Season with salt and black pepper to taste. Serve hot, topped with bacon and green onions.
