Cajun Potato Soup is a bold, creamy, and hearty dish filled with smoky sausage, tender potatoes, and Cajun spices. It’s the perfect comforting soup for chilly evenings or whenever you’re craving something rich and flavorful with a spicy kick.
Ingredients
14 oz smoked sausage
3 large russet potatoes, peeled and diced
1 medium yellow onion, chopped
2 cloves garlic, minced
4 cups chicken broth
1 cup heavy cream
1 ½ cups shredded cheddar cheese
1 tablespoon Cajun seasoning
1 teaspoon paprika
2 tablespoons butter
salt and pepper, to taste
Instructions
1. Slice the smoked sausage into coins and sear in a Dutch oven over medium-high heat until browned. Remove and set aside.
2. Add butter to the pot, then sauté the chopped onions and garlic until soft and fragrant.
3. Stir in the diced potatoes and pour in the chicken broth. Bring to a boil, then reduce to a simmer and cook until potatoes are fork-tender.
4. Add heavy cream and cheddar cheese, stirring until the cheese has melted and the mixture is smooth.
5. Season with Cajun seasoning, paprika, salt, and pepper. Taste and adjust if needed.
6. Return the sausage to the pot and simmer for 5 more minutes.
7. Serve hot, optionally garnished with parsley or extra cheese.
Notes
Use russet potatoes for a creamier texture or Yukon Golds for firmer chunks.
If you want extra heat, add cayenne pepper or hot sauce.
To make ahead, prep the sausage and chopped veggies the night before.
