Ingredients
1 lb chicken breast or thighs
10 oz rotini pasta
1 ½ cups heavy cream
1 cup freshly grated parmesan cheese
3 tablespoons butter
4 cloves garlic, minced
1 tablespoon Cajun seasoning
1 tablespoon olive oil
Salt and pepper, to taste
1 tablespoon fresh parsley, chopped (optional)
Instructions
1. Season the chicken with Cajun seasoning, salt, and pepper.
2. Heat olive oil in a skillet over medium-high heat. Sear chicken until golden and fully cooked. Remove and set aside.
3. In a large pot, cook rotini pasta in salted boiling water until al dente. Drain, saving ¼ cup pasta water.
4. In a saucepan, melt butter and sauté minced garlic for 1 minute.
5. Stir in heavy cream and bring to a gentle simmer.
6. Gradually whisk in parmesan cheese until the sauce is smooth.
7. Add cooked pasta to the sauce and toss to coat. Use pasta water to adjust thickness.
8. Serve the pasta topped with Cajun chicken. Garnish with parsley if desired.
Notes
Let the cooked chicken rest for 2-3 minutes before slicing to retain its juiciness.
Freshly grated parmesan melts better and gives a smoother sauce than pre-shredded.
