Ingredients

4 large yellow onions

4 tablespoons unsalted butter

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon fresh thyme or rosemary (optional)

1 cup vegetable or chicken broth


Instructions

1. Peel the onions, keeping the root end intact to hold them together. Trim the tops slightly and score a shallow X into the top of each one.

2. In a small saucepan, melt butter with olive oil over low heat. Add garlic, salt, pepper, and herbs if using. Let it infuse for 2–3 minutes.

3. Place onions upright in a cast iron skillet or oven-safe baking dish. Pour broth around the onions. Brush or spoon garlic butter generously over the tops.

4. Cover the skillet tightly with foil and bake at 375°F (190°C) for 45 minutes.

5. Remove foil, baste onions with pan butter, and roast uncovered for 30–35 minutes more, basting occasionally, until golden and tender.

6. Serve warm, drizzled with the buttery broth. Garnish with fresh herbs if desired.

Notes

For deeper flavor, use chicken broth instead of vegetable broth.

Don’t skip scoring the tops—it helps flavor soak in and ensures even cooking.
