Description
Butternut Squash Casserole is the perfect blend of sweet and savory. Roasted squash, herbed sausage, gooey cheddar, and crispy topping make this cozy casserole ideal for holidays or weeknight dinners.
Ingredients
4 cups cubed butternut squash
1 pound ground sausage
1 medium onion, chopped
2 cloves garlic, minced
1 tablespoon fresh sage, chopped
1 teaspoon thyme leaves
1 ½ cups shredded cheddar cheese
1 cup breadcrumbs or cornbread crumbs
2 tablespoons olive oil or butter
1 teaspoon salt
½ teaspoon black pepper
Instructions
1. Preheat the oven to 400°F. Peel, deseed, and cube the butternut squash.
2. Toss squash with olive oil, salt, pepper, and thyme. Spread on a baking sheet and roast for 25–30 minutes until golden and tender.
3. In a skillet, cook the sausage until browned. Drain if needed.
4. Add onion, garlic, sage, and thyme to the skillet. Cook until onions are translucent and fragrant.
5. In a large bowl, combine the roasted squash and sausage mixture. Stir in half of the shredded cheese.
6. Lightly grease a 9×13 casserole dish. Pour in the mixture and spread evenly.
7. Top with remaining cheese and breadcrumbs.
8. Bake at 375°F for 20–25 minutes, until bubbly and golden.
9. Garnish with fresh sage before serving, if desired.
Notes
For easy peeling, microwave the whole squash for 2 minutes before peeling.
Use cornbread crumbs for a more Southern-style flavor.
Add red pepper flakes or use spicy sausage for a kick of heat.
