Description
This Butternut Squash Caramelized Onion Tart is a warm, savory, and cozy recipe perfect for autumn gatherings, holiday spreads, or a comforting vegetarian meal. Sweet roasted squash, jammy caramelized onions, and creamy goat cheese sit in a golden crust bound together by a luscious custard—simple ingredients elevated with seasonal charm.
Ingredients
1 medium butternut squash, peeled and diced
2 yellow onions, thinly sliced
4 ounces goat cheese or feta, crumbled
2 large eggs
1/2 cup heavy cream
2 tablespoons olive oil
1 teaspoon fresh thyme leaves
1/2 teaspoon salt
1/4 teaspoon black pepper
1 9-inch pie crust or tart shell, pre-made or homemade
Instructions
1. Preheat the oven to 400°F.
2. Toss diced butternut squash with 1 tablespoon olive oil, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes until tender and golden. Let cool slightly.
3. Heat 1 tablespoon olive oil in a skillet over medium-low. Add sliced onions and cook for 25–30 minutes, stirring occasionally, until caramelized and golden brown.
4. Fit the tart shell or pie crust into a 9-inch tart pan. Trim edges and blind bake at 375°F for 10 minutes to prevent sogginess.
5. In a mixing bowl, whisk together eggs, heavy cream, a pinch of salt and pepper, and thyme leaves.
6. Layer the roasted squash and caramelized onions evenly into the tart shell. Add crumbled goat cheese or feta over the top.
7. Pour the egg mixture gently over the filling.
8. Bake at 375°F for 25–30 minutes, or until custard is set and the top is lightly golden.
9. Let cool slightly before slicing and serving.
Notes
For best flavor, don’t rush caramelizing the onions—slow cooking is key.
Blind baking the crust ensures a crisp bottom that won’t get soggy.
Let the tart rest for 10 minutes after baking for easier slicing and firmer texture.
