A bold, flavor-packed pasta dinner featuring spicy buffalo garlic chicken bites atop creamy rotini coated in ranch Cajun Alfredo sauce. It’s spicy, savory, rich, and comforting—perfect for when you want something extra special at home.
Ingredients
1 lb chicken breast (boneless, skinless)
1/2 cup buffalo sauce
2 cloves garlic (minced)
1 tbsp olive oil
12 oz rotini pasta
1 1/2 cups heavy cream
1 tbsp Cajun seasoning
1/3 cup ranch dressing
3/4 cup grated Parmesan cheese
2 tbsp chopped fresh parsley or chives
1/2 tsp salt
1/4 tsp black pepper
Instructions
1. Toss the chicken breast pieces in buffalo sauce, garlic, olive oil, salt, and pepper. Let marinate for 20 minutes.
2. In a hot nonstick skillet, sear the chicken bites for 6–8 minutes until fully cooked and slightly charred. Set aside.
3. Cook rotini pasta in salted water until al dente. Drain and set aside.
4. In a saucepan, heat heavy cream, Cajun seasoning, and ranch dressing until simmering. Whisk in Parmesan until smooth and thickened.
5. Plate pasta, top with Alfredo sauce, add buffalo chicken bites, and garnish with parsley or chives. Serve hot.
Notes
Use a squeeze bottle for the Alfredo sauce to make a gorgeous drizzle presentation.
Let the chicken rest a few minutes after searing to retain its juices.
If reheating, add a splash of cream or milk to bring the sauce back to life.
