Ingredients

2 lbs chicken breasts

2 cups cherry tomatoes, halved

1 ½ cups shredded mozzarella cheese

3 cloves garlic, minced

1 tablespoon balsamic vinegar

2 tablespoons olive oil

1 teaspoon Italian seasoning

½ teaspoon salt

¼ teaspoon black pepper


Instructions

1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.

2. In a large bowl, toss chicken breasts with 1 tablespoon olive oil, salt, pepper, and Italian seasoning.

3. In a separate bowl, mix halved cherry tomatoes, minced garlic, balsamic vinegar, 1 tablespoon olive oil, and a pinch of salt.

4. Place the seasoned chicken in the baking dish and top evenly with the tomato mixture. Cover with aluminum foil.
