  • Author: Olivia McKenney
  • Total Time: 15 minutes
  • Yield: 18-24 cookies (depending on size)

Description

These brownie mix cookies are the ultimate shortcut to rich, fudgy indulgence. With just a few simple ingredients, you get all the flavors of a homemade brownie in a cookie form—crispy on the outside, gooey in the center, and loaded with melty chocolate. Perfect for busy bakers or spontaneous sweet cravings.

Ingredients

1 box brownie mix (fudgy style)

2 large eggs

1/4 cup vegetable oil

1/4 cup all-purpose flour

1/2 to 3/4 cup chocolate chips or chunks

1 tsp vanilla extract (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large bowl, mix brownie mix, eggs, oil, and flour until thick dough forms.
  3. Fold in chocolate chips or chunks and vanilla extract if using.
  4. Scoop tablespoon-sized portions onto baking sheets, spacing 2 inches apart.
  5. Press extra chocolate chunks on top if desired.
  6. Bake for 9–11 minutes. Edges should be set; centers may still look soft.
  7. Cool on the baking sheet for 5 minutes, then transfer to a wire rack.
