Description
Thick, fudgy brownie cookies sandwiched around a light, fluffy peanut butter frosting. This dessert strikes a perfect balance between rich chocolate and creamy peanut butter—ideal for holidays, parties, or just because.
Ingredients
1 cup unsalted butter
1 cup granulated sugar
1 cup brown sugar
2 large eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
1 cup unsweetened cocoa powder
1 teaspoon baking soda
0.5 teaspoon salt
1 cup creamy peanut butter
0.5 cup unsalted butter
2 cups powdered sugar
2 to 3 tablespoons heavy cream or milk
Instructions
1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
2. In a large mixing bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
3. Add eggs one at a time, then mix in vanilla extract.
4. In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
5. Gradually mix the dry ingredients into the wet mixture until fully combined. Dough should be thick and slightly sticky.
6. Scoop dough using a cookie scoop or tablespoon onto baking sheets, spacing apart.
7. Bake for 9–11 minutes until edges are set. Centers should remain soft. Cool completely.
8. For the frosting, beat peanut butter and butter until creamy. Add powdered sugar gradually and beat. Mix in cream until desired consistency.
9. Once cookies are cool, spread or pipe frosting on the flat side of half the cookies. Top with another cookie to sandwich them.
Notes
Use room temperature butter and eggs for best consistency.
Don’t overbake the cookies—pull them out when centers are still soft.
Chill frosting briefly if it’s too soft to pipe or spread cleanly.
