  • Author: Olivia McKenney

  • Yield: 4 sandwiches

Description

These breakfast sandwiches—made three delicious ways—are the ultimate morning upgrade. Using English muffins or croissants as the base, each sandwich is layered with fluffy eggs, melty cheese, and savory meats like bacon or ham. They’re easy to make, freezer-friendly, and totally customizable.

Ingredients

2 English muffins, split

2 croissants, sliced in half

4 large eggs

4 slices cheddar cheese

4 slices cooked bacon or ham (or a mix of both)

1 avocado, sliced (optional)

1 tablespoon butter or oil

Salt and pepper to taste

Instructions

  1. Lightly butter and toast English muffins and croissants in a skillet or oven until golden.
  2. In a skillet, cook eggs to your preference (scrambled, fried, or omelet-style). Season with salt and pepper.
  3. Cook bacon until crispy or heat ham slices until seared. Drain excess grease.
  4. Assemble sandwiches:
    • For English muffins: bottom half, cheese slice, egg, bacon, top half.
    • For croissants: avocado slices, scrambled egg, bacon or ham, cheese, top half.
  5. Warm assembled sandwiches in skillet or oven until cheese melts and everything is heated through.
  6. Serve hot or cool completely and wrap for storage.
