Description
These Breakfast Croissant Sandwiches are a dreamy combination of fluffy scrambled eggs, crisp bacon, melty cheese, and juicy sausage, all nestled in a warm, buttery croissant. Whether served fresh for brunch or prepped for busy mornings, this sandwich is the ultimate handheld breakfast favorite.
Ingredients
4 croissants
6 large eggs
4 slices bacon
4 breakfast sausage patties
4 slices cheese (cheddar, Swiss, or mozzarella)
1 tablespoon butter
1 tablespoon chopped chives (optional)
Instructions
1. Place the bacon in a skillet over medium heat and cook until crispy. Transfer to a paper towel-lined plate and set aside.
2. In the same skillet or a new one, cook the sausage patties until browned and fully cooked through. Keep warm.
3. In a bowl, whisk the eggs with a pinch of salt. Melt butter in a nonstick skillet over low heat. Pour in the eggs and stir gently until fluffy and just set.
4. Slice each croissant in half horizontally. Toast lightly on a baking sheet at 350°F for about 5 minutes.
5. Assemble each sandwich with sausage patty, cheese slice, scrambled eggs, and bacon. Top with the other half of the croissant and garnish with chives if desired.
6. Serve immediately or wrap in foil to keep warm for later.
Notes
Toasting the croissants helps prevent sogginess from the warm fillings.
You can swap out meats for vegetarian options like sautéed mushrooms or spinach.
If freezing, wrap each sandwich tightly and reheat in a 350°F oven until hot throughout.
