Ingredients
2 lbs boneless, skinless chicken thighs or breasts, cut into 1.5-inch cubes
1/2 cup bourbon
1/2 cup brown sugar
1/4 cup soy sauce
1/4 cup ketchup
1 tbsp apple cider vinegar
2 garlic cloves, minced
1/2 tsp grated ginger (optional)
1 tbsp cornstarch mixed with 1 tbsp water (slurry)
2 tbsp chopped green onions (for garnish)
Skewers (metal or soaked wooden)
Instructions
- Prepare the Chicken: Cut chicken into even 1.5-inch cubes and pat dry.
- Make the Marinade: In a saucepan, combine bourbon, brown sugar, soy sauce, ketchup, vinegar, garlic, and ginger. Simmer for 5-7 minutes until slightly thickened.
- Marinate: Pour most of the marinade over the chicken in a bowl or zip-top bag. Reserve the rest for basting. Marinate for at least 1 hour or overnight.
- Skewer the Chicken: Thread marinated chicken onto skewers.
- Grill: Preheat grill to medium-high. Grill skewers 10-12 minutes, turning and basting with reserved marinade.
- Serve: Sprinkle with chopped green onions and serve hot.
