Boat Dip, also known as Rotel Ranch Dip, is the ultimate no-cook, crowd-pleasing appetizer. Ingredients
1 cup sour cream
1 can (10 oz) Rotel tomatoes with green chilies, drained
1 packet ranch seasoning mix
1 cup shredded sharp cheddar cheese
1/2 cup diced red bell pepper
1/4 cup chopped green onions
Optional: 1/4 cup crumbled cooked bacon, 1 tablespoon chopped jalapeños, pinch of smoked paprika
Instructions
1. Drain the can of Rotel well to remove excess liquid.
2. In a large mixing bowl, stir together sour cream and ranch seasoning until smooth.
3. Fold in the drained Rotel, cheddar cheese, diced bell pepper, and green onions. Add any optional ingredients at this stage.
4. Transfer the mixture to an airtight container and chill for at least 1 hour.
5. Before serving, give the dip a quick stir. Serve chilled with chips, crackers, or veggie sticks.
Notes
Chill for at least one hour to let flavors meld and deepen.
For a lighter version, use Greek yogurt instead of sour cream.
Always drain Rotel thoroughly to avoid a watery dip.
