Ingredients
4 ounces goat cheese
1 French baguette, sliced into ½-inch rounds
1 cup fresh blackberries
2 tablespoons honey
1 teaspoon chopped fresh thyme or rosemary
2 tablespoons olive oil
Pinch sea salt
Pinch cracked black pepper
Instructions
1. Preheat oven to 375°F. Slice the baguette into ½-inch thick rounds.
2. Place slices on a baking sheet and brush both sides with olive oil.
3. Toast in the oven for 8–10 minutes, flipping halfway through, until golden and crisp.
4. Rinse and dry blackberries. If large, cut in half or gently mash a few.
5. Mix blackberries with chopped thyme or rosemary in a small bowl.
6. Spread each toasted slice generously with goat cheese.
7. Top with spoonfuls of the blackberry mixture.
8. Drizzle each with honey.
9. Sprinkle with sea salt and cracked black pepper.
