Ingredients

4 cups corn (fresh, frozen, or canned and drained)

½ cup mayonnaise

½ cup sour cream

1 cup cotija cheese, crumbled

¼ cup fresh cilantro, chopped

1 jalapeño, finely diced

2 tablespoons fresh lime juice

1 teaspoon chili powder

¼ cup green onions, sliced

½ teaspoon garlic powder

½ teaspoon salt

¼ teaspoon black pepper


Instructions

1. Char the corn: In a dry cast iron skillet over medium-high heat, sauté the corn until lightly charred, about 5–7 minutes. Let cool slightly.
