Description
A colorful and refreshing salad combining sweet roasted beets, tangy feta, and fresh herbs. Perfect as a light appetizer, side dish, or vegetarian main.
Ingredients
4 medium beets
1/3 cup crumbled feta cheese
2 tablespoons chopped fresh dill or parsley
2 tablespoons olive oil
1 tablespoon red wine or balsamic vinegar
Salt and pepper, to taste
Instructions
- Preheat oven to 400°F (200°C) or prepare a pot of boiling water.
- Trim and scrub the beets. Roast in foil for 45-60 minutes, boil for 30-40 minutes, or steam until fork-tender.
- Let the beets cool, peel, and slice into rounds or wedges.
- In a small bowl, whisk together olive oil, vinegar, salt, and pepper.
- Arrange beets on a platter and drizzle with the dressing.
- Crumble feta over the top and sprinkle with herbs.
- Let sit 10 minutes before serving, or serve immediately.
