Description

Tender chunks of beef simmered with mushrooms in a rich brown gravy—this recipe works beautifully in either a slow cooker or Instant Pot. It’s comforting, flavorful, and perfect served over mashed potatoes, rice, or noodles.


Ingredients

2 pounds beef stew meat (chuck or sirloin tips)

8 ounces mushrooms, sliced (white or cremini)

2 cups beef broth

1 medium onion, diced

3 cloves garlic, minced

2 tablespoons Worcestershire sauce

2 tablespoons soy sauce

1 teaspoon thyme (dried or fresh)

2 tablespoons cornstarch

2 tablespoons water (for slurry)

2 tablespoons olive oil or butter salt and pepper, to taste


Instructions

  1. 1. Heat olive oil or butter in a skillet or the sauté function of your Instant Pot.
  2. Brown the beef tips on all sides in batches.
  3. Transfer beef to slow cooker or leave in the Instant Pot
  4. Add mushrooms, onion, and garlic. In a bowl, mix together beef broth, Worcestershire sauce, soy sauce, thyme, salt, and pepper. Pour over beef and veggies. Cook: – Slow Cooker: Low for 6–8 hours or high for 3–4 hours. – Instant Pot: High pressure for 35 minutes; natural release for 10–15 minutes.
  5. Mix cornstarch and water into a slurry. Add to cooked beef. – For Slow Cooker: Turn to high and cook 15 minutes until thick. – For Instant Pot: Use sauté to simmer until thickened.
  6. Serve hot over mashed potatoes, rice, or noodles. Garnish with parsley if desired.

Notes

Searing the beef before slow cooking adds deep, caramelized flavor—don’t skip this step for best results.

Make the slurry fresh when you’re ready to thicken; adding it too early may cause clumping. For extra depth, add a splash of red wine or balsamic vinegar to the broth mix.
