These Beef and Pepper Rice Bowls are a fast and flavorful dinner option, blending seasoned ground beef with sautéed bell peppers and onions, served over warm rice. Ideal for quick weeknight meals or make-ahead lunches.
Ingredients
1 lb ground beef
1 red bell pepper, chopped
1 green bell pepper, chopped
1 yellow onion, diced
2 cloves garlic, minced
2 tbsp soy sauce
1 tbsp Worcestershire sauce
1/4 tsp black pepper
3 cups cooked white rice
1 tbsp olive oil
Instructions
1. Heat olive oil in a large skillet over medium heat. Add chopped onions and bell peppers. Sauté for 5–7 minutes until softened.
2. Push veggies to the side. Add ground beef to the skillet. Break it apart and cook until browned. Drain any excess grease.
3. Add minced garlic and cook for 1 minute. Stir in soy sauce, Worcestershire sauce, and black pepper. Mix well.
4. Simmer the mixture for 5 minutes, allowing flavors to meld and sauce to reduce slightly.
5. Serve the beef and pepper mixture over bowls of cooked white rice. Garnish if desired.
Notes
Chop all vegetables ahead of time for quicker cooking.
Use lean ground beef to minimize draining and keep the dish lighter.
Add chili flakes or hot sauce to the skillet if you want a spicy version.
